These easy pumpkin muffins are loaded with all your favourite autumn spices and lots of pumpkin flavour.
- 1-3/4 cup flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ginger
- ¼ cup flax seed, ground
- ½ cup butter or coconut oil, melted
- 2 eggs, whisked
- 1 tsp vanilla
- ¾ cup brown sugar
- 1 cup pumpkin puree
- ½ cup unsweetened applesauce
- ½ cup pecans, walnuts, raisins, dried cranberries, or chocolate chips
- Orange juice, optional
- Sugar, optional
Preheat oven to 375 deg. F. Combine flour, soda, cinnamon, ginger, and flax seed in a bowl. Stir together butter, eggs, vanilla, brown sugar, pumpkin, and applesauce in another bowl. Add pumpkin mixture to flour mixture and stir to just combined. Fold in nuts, etc. if using. Spoon batter into paper-lined or greased muffin cups. Bake for 18 to 20 minutes or until toothpick comes out clean.
While still warm, dip tops of muffins into orange juice and then into sugar; cool. May be frozen up to 1 month.
