Zucchini Quiche

ZucchininQuiche

A great way to use up your zucchini and good for entertaining!

  • Pastry, your own recipe or a mix
  • ¼ cup butter or margarine
  • 1 cup chopped onion
  • 4 cups unpeeled zucchini, thinly sliced
  • 1 tbsp. chopped chives
  • 1 tsp parsley flakes
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp basil
  • ¼ tsp oregano
  • ¼ tsp garlic powder
  • 2 eggs
  • 1 tbsp prepared mustard
  • 2 cups grated mozzarella cheese
  1. Line a 10 inch pie pan or quiche pan with pastry.  Set aside.
  2. Melt butter in frying pan.  Add onion and sauté until soft and clear.
  3. Remove onion to a large bowl.
  4. Add Zucchini to frying pan and sauté for about 5 minutes till slightly soft.
  5. Add to onion in the bowl.  Stir in next 7 ingredients.
  6. Beat eggs with mustard and add to bowl.  Then add grated mozzarella cheese.
  7. Stir all together and then turn into pastry lined pan.
  8. Bake uncovered at 375 deg. F for 20 to 30 minutes.
  9. Quiche will test done if a knife inserted in center comes out clean.
