A great way to use up your zucchini and good for entertaining!
- Pastry, your own recipe or a mix
- ¼ cup butter or margarine
- 1 cup chopped onion
- 4 cups unpeeled zucchini, thinly sliced
- 1 tbsp. chopped chives
- 1 tsp parsley flakes
- ½ tsp salt
- ¼ tsp pepper
- ¼ tsp basil
- ¼ tsp oregano
- ¼ tsp garlic powder
- 2 eggs
- 1 tbsp prepared mustard
- 2 cups grated mozzarella cheese
- Line a 10 inch pie pan or quiche pan with pastry. Set aside.
- Melt butter in frying pan. Add onion and sauté until soft and clear.
- Remove onion to a large bowl.
- Add Zucchini to frying pan and sauté for about 5 minutes till slightly soft.
- Add to onion in the bowl. Stir in next 7 ingredients.
- Beat eggs with mustard and add to bowl. Then add grated mozzarella cheese.
- Stir all together and then turn into pastry lined pan.
- Bake uncovered at 375 deg. F for 20 to 30 minutes.
- Quiche will test done if a knife inserted in center comes out clean.
